Homestyle Hash Brown Casserole


Homestyle Hash Brown Casserole is a simple, hearty meal that will feed your family for a fair price. Everything in this recipe is easy to find and probably already in your ice box or pantry. It is a breakfast dish, but I love eating breakfast for dinner - so take some frozen hash browns out to thaw in the morning and when you get home, whip up this casserole, clean up while it's baking, and relax for the rest of the evening.

Southern Style Hash Brown Casserole

One thing I love about this recipe is how simple it is. Grab you a large mixing bowl, and combine the cream of chicken soup, sour cream, whipped cream cheese, and the egg.

Tip: For added flavor, mix in some diced green chiles.

Use a hand mixer and whip until everything is well combined and smooth.

Tip: Buy the pre-whipped cream cheese to save some time.

Add a cup of the cheddar cheese and mix well. Next, add the onion and chopped cooked bacon. Last, add the thawed hash browns, Original Seasoning, and mix (probably by hand) until everything is smooth without.

Tip: If you don't have Original Seasoning, use salt & coarse ground pepper.

Top with the remaining cheese and bake in a 375 degree oven or over hot coals until everything is hot and bubbly and the cheese is gooey. Let cool until the bubbling stops and serve up with some fried eggs and, if you have it, our Cowboy Green Chile & Chipotle Chutney.

Homestyle Hash Brown Casserole - Cowboy Kent Rollins

Ingredients

  • 1 10 ounce can cream of chicken soup

  • 1 cup sour cream

  • 1 cup cream cheese

    softened and whipped

  • 1 large egg

  • 2 lbs. frozen shredded hash browns

    thawed

  • 2 tablespoons butter

    melted

  • 1 tsp Kent's Original Seasoning

    or salt & pepper

  • 2 cups shredded cheddar cheese

    divided

  • ½ cup finely chopped yellow onion

  • 6 slices thick-cut bacon

    cooked and chopped

Instructions

  1. Preheat the oven to 375 degrees F. Butter/Grease a 9 x 13-inch casserole dish or 12-inch Dutch oven.

  2. In a medium bowl, mix together the soup, sour cream, cream cheese and egg.
  3. Stir in the hash browns, butter, 1 cup of cheese, onion and bacon.
  4. Scrape the mixture into the prepared baking dish. Sprinkle the top with the remaining 1 cup of cheese. Bake for about 45 minutes, or until bubbling throughout and the top is lightly browned. Let cool slightly, cut and serve warm.
